Elena Marsh spent three years apprenticing at bakeries in Lyon and Copenhagen before returning to her hometown of Durango. She brought back techniques, obsessions, and a 12-year-old sourdough starter named Gertrude.
She opened Honeyed Hearth in 2016 with a single deck oven, a farmers market stall, and a waitlist that formed before she'd baked a single public loaf. Within eight months, demand moved her into the brick-and-mortar on Main Ave.

From a farmers market stall to Durango's favorite morning destination.
Elena sold 24 loaves of sourdough at the Durango Farmers Market. Sold out in 35 minutes. She went home and ordered a larger mixer.
Moved into 891 Main Ave. Added croissants, baguettes, and the almond danish that would become a Durango institution. Hired first employee: her mother.
Local restaurants started asking for wholesale bread. Added a wholesale program for 6 Durango restaurants and a full catering menu for events and corporate clients.
After years of customer requests, launched monthly sourdough and croissant workshops. Classes now sell out within 48 hours of announcement.
Named Best Bakery in Durango by Durango Herald readers for the third consecutive year. Elena celebrated by baking 200 extra loaves and giving them away.
