Our Philosophy
"We don't cook food. We compose evenings.
" — Chef Élodie Marchand, Executive Chef
Four pillars that define every visit to Maison Dorée.

Our seven-course tasting menu changes monthly to reflect what is growing, ripening, and ready. Each course is a study in restraint and intention — nothing is wasted, nothing is rushed.
Over 400 labels curated across Old and New World regions. Our sommelier pairs each course with precision — from a crisp Chablis to a velvety Pomerol.
Host celebrations, anniversaries, and business dinners in our intimate private room. Seats up to 12 with a dedicated menu, sommelier service, and full evening exclusivity.
Six seats arranged at the pass for an immersive evening with Chef Marchand and her team. A front-row view of the kitchen, plated by the hands that made it.
From a quiet midweek dinner for two to a private celebration for twelve, every visit is composed around the moment you came in for.
Tuesday through Sunday, doors at five o'clock. Reservations recommended; the bar keeps a few seats open for those passing through. Closed Monday so our cooks may rest.
On the first Thursday of each month, six wines chosen around a single theme — a vintage, a hillside, a varietal — paired with small plates and an unhurried hour with our sommelier. Eighteen guests, never more.
Rehearsal dinners, anniversaries, milestone birthdays, intimate corporate evenings. The private room seats up to twelve; full venue buyouts welcome up to thirty-two. Custom menus and pairings built around your evening.
Our anniversary dinner at Maison Dorée will stay with us forever. The lamb with truffle jus was transcendent, and the sommelier's pairing was nothing short of inspired.
I've dined at fine restaurants across Europe and New York. Maison Dorée belongs in that conversation. Chef Marchand's seasonal tasting menu is extraordinary — restrained, precise, and deeply delicious.
We hosted our rehearsal dinner in the private room. The team handled every detail with grace. Our guests are still talking about the Palisade peach dessert three months later.
The wine cellar here is a treasure. Our sommelier brought out a 2017 Gevrey-Chambertin I hadn't seen on a list in years. Service matched the food — warm, knowledgeable, invisible when it should be.
I celebrated my 50th birthday here with eight friends. Chef Marchand sent out a surprise extra course — a tiny deconstructed tarte Tatin. That gesture of generosity is what sets Maison Dorée apart.
The best meal I've had in Colorado. Period. The duck confit with black garlic and roasted beet is a permanent memory. Cannot wait to return for the autumn tasting menu.
