Five years ago Marcus Torres bought a used offset smoker and a bag of oak wood. Durango has never been the same.

Our Story

Marcus Torres spent 12 years in restaurant kitchens before burning out on corporate food service. In 2019 he bought a rusted offset smoker at an estate sale and started experimenting in his backyard on Animas Mountain Trail. Neighbors started lining up. Then their neighbors.

Six months later, Marcus had a truck, a logo, and a spot at the Durango Farmers Market. He sold out his first Saturday in 90 minutes. He hasn't had a slow market day since. The menu grew from brisket and pulled pork to tacos, seasonal specials, and a catering operation that books 3-4 events per week.

What We Stand For

Three commitments we make every time we fire up the truck.

No Shortcuts

We'd rather sell out than serve food that isn't ready. Our smoker runs 18+ hours because good BBQ earns every minute of it.

Real Ingredients

No pre-made sauces, no powder seasonings, no frozen shortcuts. If we can't source it fresh, it doesn't make the menu.

Community First

We're a Durango business through and through. We source locally when possible and show up to community events because this town made us.
