Maison Laurent presents a single tasting menu that changes with the Colorado seasons. Seven courses, each built around one ingredient at its peak. The elk comes from a Bayfield ranch. The trout from the Animas. The micro-greens from a Hermosa greenhouse.

Chef Laurent believes dining should be unhurried. Each course arrives when the kitchen decides it is perfect — not when a timer rings. Plan for two and a half hours. You will want every minute.
