Our Origins

How Maison Laurent Began

Chef Isabelle Laurent trained at Le Cordon Bleu Paris and spent eight years in Michelin-starred kitchens in Lyon and Copenhagen before moving to Durango for the mountains and the ingredients.

She opened Maison Laurent in 2021 with 28 seats, no printed menu, and a conviction that Colorado’s ingredients deserve the same reverence as any terroir in France.
